From grinding the elaborate spices that go into our moles to milling our own nixtamalized corn for our tortillas, everything at Copal is made from scratch using traditional methods and local ingredients when possible.
VIEW MENU ↠We have a passion for agave and our menu reflects that. We honor the work that master palenqueros (mezcal distillers) put into the spirit and seek out small palenques that follow traditional methods and produce handcrafted world-class spirits. While agave reigns supreme at Copal, we are also fans of other spirits and thus great bourbon, gin, rum, etc. round out our menu. We also round out the bar menu with an interesting selection of beer and wine.
